Cookie Dough Baked Oats - Pumpkin Edition!
Time: 3 minutes prep, 20 minutes bake time
1-2 tablespoons canned pumpkin
Preheat your oven to 350F and spray or oil a ramekin/oven safe bowl. I like Sprout's brand or Chosen Foods spray coconut oil.
Measure out 1/3-2/3 cup of our Baked Oatmeal Dry Mix. Mix with equal part non-dairy milk. I love Good Karma Flaxmilk as an everyday choice or cashew milk for a little more indulgence! Then add 1-2 tablespoons of canned pumpkin.
Mix these together and then pour into the oiled ramekin.
Now for the fun part - add about 5 bits of cookie dough and spread throughout. I like to use a spoon held upside down (curved part facing up) to scrape cookie dough strips off the top of the dough. Place these throughout the oatmeal mix - underneath and sitting on the surface.
Bake for about 20 minutes.
You can also use other add-ins like more chocolate chips or top with some melted coconut butter (or manna) as a glaze.
